Split Pea Soup

Delicious

Delicious Split Pea Soup - perfect for these days when it's starting to get colder. Freezing in ice cube trays makes for nice single serve baby food. Lauren can't get enough of this soup!

Ingredients:

  • 2-3 Tablespoons of butter, lard or olive oil
  • 1 large onion, coarsely chopped
  • ~1 cup of chopped celery
  • ~1+ cup of chopped carrot
  • 2-3 teaspoons of dried herbs of your choice (marjoram, thyme, basil, oregano, etc)
  • 1 ½ cup of dried green split peas
  • 6-8 cups of broth (preferably from our smoked ham bones)

Melt fat in a medium stock pot, add veggies and sauté. Add broth, herbs and peas. Simmer until peas are easy to smash, about 1 hour or so. Using your immersion blender (or a stand blender if needed), blend the soup to your desired consistency. Salt to your preference. If you use less broth, it will be really thick and make for great baby food. You can also add in any sort of meat after blended. Good options include ham, bacon, sausages, etc. 

We recommend making a double batch and freezing half of it in ball jars or glasslock containers. Freezing in ice cube trays makes for nice single serve baby food. Lauren can’t get enough of this soup!
