Simple Chicken Soup

Great for making ahead of time and reheating

Ingredients:

  • 1 whole chicken OR 8 drumsticks OR 4 thighs OR wings (any combination is fine)
  • Assorted chopped vegetables such as carrots, celery, onions, potatoes, whatever you have on hand
  • If you eat grain, consider adding cooked noodles if you wish (we don't)
  • Assorted dried (or fresh) herbs such as parsley, sage, thyme, basil
  • salt

Instructions to prep:

  1. Put the chicken into a stockpot (or crockpot on low), cover about halfway with water.
  2. Simmer on the stove until chicken falls off the bone (or longer at  your convenience): 8 to 24 hours. Turn the chicken over after a couple hours.
  3. Remove the chicken from the pot. Strain the broth and return broth back to pot. When chicken is cool enough to handle, pull meat off the bones, coarsely chop against the grain or shred the meat. Then return to pot.
  4. Add vegetables to pot, simmer until veggies are soft.
  5. Add herbs and salt to taste.
