Our chorizo isn't dried like a traditional sausage, so it is a bit more versatile. Here is a simple dish that works for breakfast or dinner.
Turn on your oven to 450, preferably on convect.
Heat up a heavy oven safe pan (cast iron is best), add some coconut oil or butter
Brown the potatoes, be sure to have enough oil to coat them
Place potatoes into the oven to finish cooking (or if you prefer, you can also cover them with a sheet pan while browning to help cook the inside without burning).
While the potatoes are cooking, heat up another pan and cook all of the other ingredients. Since it is smoked, the Chorizo is pre-cooked -- you're going for a nice sear on all of the items to help add some depth in flavor.
Combine all ingredients into one pan and serve. A nice pino gris or IPA would go well with it.
