Kids love pancakes. The trouble is that even gluten free ones are full of processed flours which are really hard on developing bodies. Our banana 'cakes' are fast and easy to make... plus they are a HUGE hit with our kids. We love how healthy these cakes are.
While it is probably fine to give kids some amounts of grain, the amount we as a society consume is way over the top. It is clear sugar (in any form) is causing severe damage to the next generation. In fact, the top four foods American children consume are:
And let's be honest, most pancakes with syrup should count as a 'grain based dessert' and not the slightly better for you 'yeast bread'.
These cakes count as 'eggs and fruit', full of essential nutrients! I still love making my famous (real) pancakes for our kids, but I make sure to use enough butter to slow down their digestion of the flour. However, these banana 'cakes' are more of a staple.

1) Add coconut flakes to the batter... this works even without the banana (here are some bulk organic coconut flakes or in smaller bags)
2) Use shredded apples alone or with other ingredients. We LOVE how well our Breville - All in one Immersion Blender shreds the apples... super fast and easy!

This is a fantastic recipe! My kids absolutely loved them, and the little bit that my husband and I actually got to eat was delicious. They were incredibly easy to make, and although ours turned out like a big pile of pancake just like my omelets do because I am terrible at flipping them, we can't wait to make this recipe again! It is a nice mix between traditional pancakes and scrambled eggs. We used coconut oil to coat the pan, and the pancake was perfectly sweet without needing to add any syrup or other toppings.

Awesome! One of our kids didn't like the all banana version, so we experimented and made one with coconut flakes (with or without banana)... I updated with an image of those -- pretty good!
