Roasted Cauliflower With Garlic

Yum -- the cauliflower and garlic caramelize in the olive oil... fantastic!

I expected this dish to be maybe just passable as a side when I first made it up... After all, it is simple and easy to make, just a few ingredients.

However, something magic happens in that oven with the oil... the cauliflower and garlic both caramelize into a symphony of goodness.

Ingredients:

  • 1 head of organic cauliflower
  • 5-6 cloves of garlic, minced
  • Olive oil
  • Fresh or dried herbs (thyme or rosemary would be great)
  • Sea salt

Instructions

  1. Pre-heat oven to 400
  2. Cut the cauliflower in fairly large pieces. I even save the inside 'stem' parts as they roast up great.
  3. Place the cauliflower on a baking sheet and liberally cover in olive oil.
  4. Add sea salt, garlic and herbs, then mix to get everything covered in the oil.
  5. Roast for 20 minutes until the cauliflower has started to brown.
  6. Enjoy!


So glad I made a double batch tonight!

Cauliflower health benefits:

  1. Heart Healthy. The sulforaphane in cauliflower has been shown to reduce inflammation in the body. Inflammation is considered to be the root cause of heart disease, stroke, etc. There is now strong evidence that a diet rich in cauliflower (and other brassica) will lower your risk of heart disease. Other studies have shown sulforaphane to improve blood pressure and kidney function.
  2. Cancer Prevention. Sulforaphane also has been shown to degrade a number of human cancer cell lines, including prostate, breast, ovarian, colon and pancreatic cancer.
  3. Essential Nutrients. Cauliflower is full of vitamins, minerals and dietary fiber. It is a good source of choline, an essential B vitamin. Choline has been linked to improved memory and prenatal development. It is a precursor for the building blocks of every cell in your body. And we don't eat nearly enough of it. So get the cauliflower in your oven and fry up some good pasture raised eggs: they both have lots of choline!
