Avocado chocolate (vegan) pudding extravaganza

Just because I raise animals, people think that I'd hate on vegan diets... but I love vegans! Sure, I can eat one pound of ground beef at lunch after a hard morning of work ...but my views on industrial meat system are more aligned with vegans than you might imagine. I have also found that some vegans to be among our best customers -- insisting their family members who are omnivores eat ethically and environmentally sound meat.

With that, I present to you our Avocado chocolate (vegan) pudding extravaganza. This is a great dessert, quick and easy to make. Something both the kids and grown-ups will love

2-3 modest servings

Ingredients:

  • one ripe, but not super soft avocado
  • 1/2 cup of organic raw cocoa powder
  • 1/2 cup of coconut milk (Make your own)
  • 1-2 T vanilla extract (also make your own)
  • 1/4 cup of sweetener (maple syrup, honey, dates)
  • organic raw cacao nibs for garnish

Instructions:

  1. Peel and pit your avocado, place in food processor or a good blender (ideally use a smaller one that comes with your immersion blender)
  2. Add cocoa powder, milk, vanilla and maple syrup to the processor
  3. Puree on high until smooth
  4. Garnish with cacao nibs and/or coconut whipped cream (or actual whipped cream if you don't want it to be vegan)

Notes:
With two tablespoons of vanilla extract, this is really an adult dessert. If you split this, that is 1/2 a shot of hard liquor per serving. If you make this for your kids, if you don't like an alcohol background flavor, or if you don't want to spend a fortune on extract, drop this to 1 teaspoon. (This recipe is a perfect reason to make your own extract!)

Variations:
I would think a 1/4 cup of peanut butter would be fantastic. A half banana also would be good for those who enjoy banana and chocolate. Even a bit of orange zest...
