We're so excited to have been asked to contribute our pasture raised Minnesota pork to the Slow Food MN foraged dinner, Where the Wild Things Are 2016.  This meal is a fantastic opportunity to try some of the best that the area has to offer your taste buds.  Nearly everything in the meal is found in the area (foraged), fresh and seasonal.  

Last year we attended this event and it was the best meal I'd had in quite a while.  

We are looking forward to seeing what Chef Alan Bergo of The Salt Cellar has in store for us this year!

Besides being delicious, the event is also educational.  There will be walking tours, tips on foraging for delectable treasons found all around us and more. We'll be speaking at the event and sharing about our food, farm and slow food philosophy.

Event Details

Menu

  • Turnip Rock cheese with ramp jam
  • Rabbit paté with fiddlehead bread & butter pickles and homemade mustard
  • Rustic bread
  • Salad of heirloom and wild lettuces with maple-sunflower vinaigrette
  • Wood parched wild rice with black walnuts, green garlic and wild herbs
  • Midwestern vignole of fiddleheads, peas, asparagus and nettles
  • Grilled ramp TC Farm sausage
  • Angelica pound cake with rhubarb jam and whipped cream

Walks and Talks

Heidi Coe, Wade Barry and Karl Sloth of Piney Hill

The host farmers will lead walking tours of their produce farm and surrounding fields and woods.

Chef Alan Bergo of Salt Cellar

A serious forager, Alan will share a few lessons and tips on how to discover the treasures of the May wild foods that grow under our feet.

Jack and Betsy McCann of TC Farm

Organize TC Farm and raise a variety of rare, slow-growing animal breeds using sustainable and ethical practices. They will share their story and explain how it impacts you as a consumer.
