This weeknight meal is simple to make and everyone in our family loves it - what could be better?! Pair with a salad or roasted vegetable, or just eat as a single-dish meal.
Ingredients
1 package TC Farm Bacon - we like to use the European Style Herb Bacon
1 lb pasta of your choice
1 10oz bag frozen peas (or use fresh peas if in season)
1/4 C cream
juice of 1 lemon
Instructions
Cook pasta in a pot of salted boiling water.
Chop bacon crosswise into small strips. Fry in a heavy large skillet until just crispy.
Add peas to bacon in skillet; cook until thawed (about 3 minutes)
Add cream, lemon juice, and cooked pasta to skillet. Stir to heat through.
Season to taste with salt, pepper, parmesan and/or add more cream
