This week's prep is pretty fun!
The key goals of the weekend are to:
If you can't do all of this over the weekend, I'd recommend dropping #4 as that can be made during the week fairly easily.
This is a fairly quick and fun meal now that we have the bread pre-made from last week. You can of course buy pre-made crusts... but using organic flour ensures you don't have pesticides sprayed on the grains AFTER harvest -- plus it tastes WAY better if you make your own bread.
This is a great recipe to make a bunch of extra sauce to freeze for future use
Like the pizza, this is the perfect meal to make a lot of extras. The sauce freezes well and is a timesaver in future weeks to have around for a quick healthy meal.
We use our 'Whole Beef' which includes 3% liver with the ground beef. It adds a lot of nutrients and a surprisingly nice background flavor.
I am not going to lie - this my favorite thing we've worked on the last month.
We really made this a simple recipe that anyone can do. You might need some new tools, but they aren't that expensive and totally worth it.
You could buy your own English Muffins, but with how easy we've made this recipe, you'll never want to buy them again.
The full Eggs Benedict recipe is here... or you can jump straight to the English Muffin recipe here

Towards the end of the week we will be missing our pizza, but have no energy to make more of that amazing bread. This is the perfect dish for a quick GF 'pizza' night.
We didn't make a 'recipe' for this, but seriously... fresh LOCAL greens are amazing. You should be able to get to a farmer's market and get some fantastic greens.
I prefer simple salads with a vinegar and olive oil sprinkled on top even without mixing ahead of time. A dash of sea salt and maybe some soft cheese and a hard boiled egg. yum.
Later in July, we will feature our FAVORITE summer salad... but we need fresh tomatoes to make it worth while. Soon...
We are making our life easy by pulling out the deconstructed meatballs and the Thai peanut pasta from previous weeks.
If you ate all of yours and want more or haven't made it yet, follow the links to the videos/instructions above.
We would really like to hear your comments and ideas on how to make this more useful for you.
