Stuffed Grilled Peppers

Make these when you have the grill going for burgers or brats; there's so good they might steal the show!


  • 2 sweet bell peppers
  • 4 oz cream cheese
  • 1.5 oz pine nuts, toasted
  • 1 T chopped fresh thyme or a generous sprinkle of dried thyme
  • 2 T olive oil
  • salt & pepper


  1. Slice the peppers in quarters lengthwise; scrape out the seeds and ribs.
  2. Mix the remaining ingredients and fill the peppers with the mixture.
  3. Put peppers on a hot grill skin side down and cook until undersides just begin to char; about 10 minutes.
  4. Season with more salt and pepper; serve and enjoy!


The nachos in the video were made using our pre-cooked 48 hour smoked pork (or use our Sous Vide Drumsticks, both are amazing)
