Weekend Prep

The key goals of the weekend are to:

  1. Plan out quick meals for the week so we can still eat healthy even if we are way too busy with end of school and such!
  2. Prep all the veggies so there isn't any cutting work or things to do for meals (this saves time to do it all at once)

Tacos using Salsa Meatloaf

This is such a great weeknight meal. You'll be on the deck enjoying your tacos in less than 10 minutes.

Love, love having a pack of this around for a quick meal - it is OK to pull it right out of the freezer and crisp up... just do it on a bit lower heat to avoid burning (which i almost did myself for the video -- doh!)

We top this with some chipotle powder or fresh jalapenos to give it a bit more kick.


Chicken and Coconut Soup

We love soup and this is one that tastes great in the summer. Pair it with a simple salad and maybe some bread.

The recipe calls for a whole chicken; you can also use chicken thighs or breasts that you may have in your freezer.

Additionally, if you already have some chicken broth on hand, you can skip the first part of the recipe. Cook the chicken then start on Step 5 of the recipe instructions.

Grilled Brats & Grandpa's Cucumber Salad

Jack's grandfather loved this cucumber recipe so much and it is a hit with the kids.

Salmon Salad

This is an easy meal that doesn't require you to turn on your oven or stove and heat up your kitchen. It takes a bit of planning ahead to sous-vide the salmon, so be sure to prep that a couple hours before dinner or, better yet, just do it the day before.

Grilled Drumstick Nachos and Grilled Stuffed Peppers

These drumsticks are probably Jack's favorite product we offer, although the new 48 hour smoked pork might take over.

In the chicken recipe, we sear the drumsticks whole, but if we are cooking on a pan like that, we typically cut the meat off of the bone and sear skin side down so it is faster and more even of a sear.

Grilling over high heat to crisp the skin works just as well.

Once the chicken is cooked; simply pile it on corn chips with cheese and any other toppings you like on your nachos.
