Melissa Driscoll and her husband Jay grow 9 varieties of garlic on their 7 acre certified organic farm (Seven Songs Farm) in Kenyon, Minnesota. They are part of the Produce CSA we are starting this year.
They have come up with a way to use garlic scapes to make this amazing pesto.
A garlic scape is the "false" seed-head that stiff neck varieties of garlic produce in June each year. Most garlic growers cut off the scapes to encourage the plant to send its energy to the bulb rather than the seedhead. This helps produce a larger bulb. Although scapes are delicious (they taste like very mild, crunchy garlic) most garlic farmers struggle to find an outlet for all their scapes.
Enter garlic scape pesto - made with garlic scapes!
Ingredients:
olive oil*, garlic scapes*, pumpkin seeds*, lemon juice*, Pecorino Romano Cheese, basil*, salt, black pepper*
* Certified organic
Use on pasta, pizza or as a marinate or topping on chops, fish or chicken. Mmmmmm.
