1- 1.5lbstomatoes (it can be a mix of Roma, slicer, cherry)
1 small white or red onionpeeled and roughly chopped
1 - 2 jalapeño peppers seeded and chopped
2 cloves garlicchopped
1 teaspoon cumin
1/2 teaspoon salt
½ cup chopped cilantro
Juice of one lime
Directions
Roughly chop the tomatoes, garlic, peppers, and onions, and cilantro.
Place all the ingredients in a food processor and pulse a few times to finely dice ingredients. If you don’t have a food processor you can finely dice everything by hand then combine the mixture with salt, lime juice, and cumin in a bowl.
Taste the salsa and adjust as necessary.
Transfer to airtight container and let sit in the refrigerator for a couple of hours for best flavor.
Serve with tortilla chips and enjoy!
*Get creative, stir in chopped green peppers, corn kernels or black beans!
