Candied Pumpkin (or winter squash)

TC.Farm - Fine Food Sustainably Raised
Ingredients
1 (5-pound)
pumpkin
(or similar winter squash
)
1
orange
2 lbs
brown sugar
4 cups/1 liter
water
4 sticks
cinnamon
Directions
Slice the
pumpkin
open and scoop out the seeds and save for toasting.
Leaving the rind on, cut
pumpkin
into
3” in sections
.
Zest and Juice the orange.
Combine zest, juice, sugar, water and cinnamon sticks and bring to a boil in a medium saucepan.
Add pumpkin slices and
reduce
to a s
im
mer. Cover and simmer until pumpkin is fork tender and the liquid has
reduced to a thick glaze.
Remove from heat and allow to cool to room temperature before serving
.
