Candied Pumpkin (or winter squash)

  • 1 (5-pound) pumpkin (or similar winter squash)
  • 1 orange
  • 2 lbs brown sugar
  • 4 cups/1 liter water
  • 4 sticks cinnamon


  1. Slice the pumpkin open and scoop out the seeds and save for toasting.
  2. Leaving the rind on, cut pumpkin into 3” in sections.
  3. Zest and Juice the orange.
  4. Combine zest, juice, sugar, water and cinnamon sticks and bring to a boil in a medium saucepan.
  5. Add pumpkin slices and reduce to a simmer. Cover and simmer until pumpkin is fork tender and the liquid has reduced to a thick glaze.
  6. Remove from heat and allow to cool to room temperature before serving.
