Remove cauliflower florets from the stem, breaking them up into bite size pieces. Rinse and drain the garbanzo beans.
Combine garbanzo beans, cauliflower in a 9 x 13 baking dish with3 tbsp of olive oil, salt, and pepper and bake for 20 minutes or until cauliflower is fork tender.
Whisk together mustards, vinegar and ΒΌ cup of olive oil.
Once the cauliflower and chickpeas are baked toss with mustard dressing and parsley.
