Rinse and dry Brussels sprouts stalk on a large rimmed baking sheet. Depending on the size of the stalk it my fit diagonally or need to be cut in half to fit on the baking sheet!
In a small sauce pan combine oil, maple syrup and balsamic vinegar over medium-low heat. Cook, whisking constantly for about 2-3 minutes.
Pour, brush or spoon the mixture evenly over the Brussels sprouts stalk on all sides.
Season with salt and pepper to taste.
Roast for about 30 minutes, turning the stalk every 10 minutes.
Serve on the stalk and let everyone slice of their own sprouts or slice each Brussels sprout off the stalk with a short knife before serving.
