Kumquat Marmalade

Ingredients
8 oz.
mandarinquats
3 cups
water
2 cups
sugar
1/2 tsp.
cardamom, ground
Directions
Wash the mandarinquats, scrubbing the rind well.
Juice the mandarinquats into a bowl over a strainer to catch the seeds.
Slice the rind and pulp into very thin strips and place in a small sauce pan.
Add the juice and 3 cups of cold water into the sauce pan and bring to a boil.
Reduce heat to low and simmer uncovered for about 35 minutes.
Once the rind has simmered for 35 minutes, add 2 cups of sugar and stir until sugar has dissolved.
Once the sugar has dissolved, bring the marmalade to a full boil for 10 minutes. Skim off any foam that develops.
Remove the marmalade from the heat and let cool for a few minutes. Stir in the cardamom.
Pour the marmalade into a jar and allow to fully cool, uncovered at room temp.
When cooled, store in the fridge.
