Mac and Mushrooms

  • 8 oz pasta
  • 1 Tbsp olive oil
  • 8 oz. (or more!) single variety or mixed mushrooms
  • 4 Tbsp butter
  • 4 Tbsp all-purpose flour
  • 1 tsp salt
  • 2 cup milk
  • 1 cup shredded mild cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh breadcrumbs


  • Preheat oven to 350°F. Cook pasta al dente according to package directions.
  • Cut mushrooms or separate stems into bite size pieces. Sauté in olive oil and set aside.
  • In a large saucepan melt butter and stir in flour. Cook for a couple minutes but do not brown the flour.
  • Whisk in the cold milk and salt. Bring to a low boil over medium-high heat, whisking to prevent lumps. Simmer for about 5 minutes.
  • Remove mixture from heat, stir in cheese until well combined.
  • Transfer mushrooms, cooked pasta, and cheese sauce to a three-quart baking dish. Sprinkle with breadcrumbs.
  • Bake for 30 minutes.
