Ingredients

beet greens

onion
(chopped)

live oil
Salt
and pepper
Directions
Thoroughly wash beet leaves and stems to remove any sand or dirt that is
still clinging to the ridges of the stems.
Like
prepping kale, cut the stem and thick part of the center rib from the leaves. Chop the leaves and stems separately.
Add a tablespoon or two of olive oil to a large skillet. Sautee garlic,
shallots, or onion over medium heat, with the lid, un
til softened.
Add stems and 1/3 cup water
plus salt to taste. Cover
and b
raise the stems
until tender, about 4-6 minutes.
A
dd chopped leaves and simmer, stirring occasionally, until the leaves are tender
for 3-4 minutes.
Season with salt and pepper to taste and serv
e
