Stone Fruit and Tomato Caprese Salad

  • 5 ripe stone fruits, peaches, plums and/or nectarines
  • 1 lb tomatoes
  • 8 oz fresh mozzarella pearls, drained and halved
  • 1/4 cup packed fresh basil, chiffonade
  • 2 tsp granulated sugar
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • Salt and pepper


  1. Slice stone fruit and tomatoes into thin wedges.
  2. Combine fruits and tomatoes on a serving platter. Sprinkle with 1/2 tsp salt, lemon juice, and sugar. Let marinate for 5-10 minutes. Taste and adjust sugar, salt and lemon juice.
  3. Serve cold or at room temp.
