Sweet Roasted Kabocha

Ingredients

  • 1 Kabocha squash, cut into 1/2 inch thick half moon slices
  • 2 Tbsp Olive oil
  • 2 Tbsp Maple syrup
  • Salt

Directions

  1. Preheat oven to 400°F.
  2. Lay out slices in one layer on a rimed baking sheet. Coat lightly with olive oil, maple syrup and sea salt.
  3. Roast for 30 minutes or until the squash is golden brown.
