Fried Green Tomatoes

  • 2/3 cup flour
  • 1 1/2 tsp salt
  • 3/4 tsp paprika
  • 3/4 cup buttermilk
  • 1 large egg white
  • 1 1/2 tsp hot sauce
  • 3/4 cup finely ground cornmeal
  • 3 unripe green tomatoes (1.2 lbs total), cut into 1/4 inch thick slices
  • 1/2 cup canola oil


  1. Combine 1/3 cup flour, salt and paprika together in a pie plate or shallow bowl.
  2. Whisk buttermilk, egg white, and hot sauce together in a separate shallow bowl.
  3. Stir together cornmeal and 1/3 cup flour in a third shallow bowl.
  4. Bread the tomato slices by first dipping each slice into the flour mixture, then the buttermilk mixture, and lastly the cornmeal mixture.
  5. Place the breaded sliced on a wire rack over a baking sheet.
  6. Heat the oil in a large cast iron skillet over medium-high heat for about 5 minutes.
  7. Fry 4-5 tomato slices at a time until golden brown, 3-5 minutes per side. Transfer to a paper towel lined plate.
  8. Serve warm with your favorite aoli.
