Chicken and Coconut Soup

We love this recipe. It is very flavorful but SO quick and easy to make. Start the chicken in the morning before work (or the day before if that’s easier) and the rest can be done in about 20 minutes right before dinner.

We're super excited to announce the locations for our 2016 Meet the Chicks event. Living in the city, it’s not every day you get to see baby chicks! There will be baby chicks at several of our pickup sites on Friday March 18th through Monday, March 21st. This is always a really popular event for parents with children.

We’ve always made it with chicken or as a vegetarian dish but with the pork it has just now reached its full potential. This is a quick and easy weeknight meal – enjoy!

We don’t generally have extra pepperoni to use for anything besides pizza, but we thought we should probably find another option for anyone looking to be more creative than we are! This recipe is quick to cook and uses ingredients that we generally have in the house. We don’t eat pasta often so when we do we want to make sure it is something really good!

We used to make breakfast burritos all the time. At some point we fell for the marketing gimmicks and used to think that somehow those fake sausage soy crumbles were good for us, so we’d use those. Now of course we realize that soy is pretty damaging to our bodies and that factory made sausages are deficient in key vitamins, full of crazy artificial or ‘natural’ toxic flavors and thus we wouldn’t touch the stuff. Instead, here’s a great way to nourish your body with a tasty treat!



Tamale Pie

We loved when we used to have time to make tamales. Our cousin, Andy, got us into it with a really complicated recipe that took about 20 hours to make a meal for four people. Those were the days. No time? No Corn husks? It’s a perfect time for Tamale Pie! This recipe makes a lot of food, we put half or more of it away for a future quick meal.



New Study Shows Organic Is Healthier

For those of you on the fence about signing up for an organic meat CSA or an organic veggie CSA, here's some new research you might find interesting. I can't tell you how amazingly different local organic produce is. The best thing in the world is fresh Minnesota Spinach. Even just drinking some basic chicken broth from our pasture raised organic fed chickens, I can tell how much more nourishing it is for my body than stuff I could buy out of a can.

I don't think I would have come up with this recipe -- but it sure is a great way to showcase our slow growth dark meat chicken. Making a coconut poached drumstick really is simple to do and a perfect compliment to Pad Thai. This is a classic in the making.
