Looking for something to keep the kids entertained or just the satisfaction of getting to watch your own food re-grow before your eyes? The celery, scallions and Red leaf lettuce in your produce box this week can all be regrown in water, right on your kitchen counter.
The method for each of veggies is similar and more details can be found online so in the limited space here, we’ll focus on the lettuce. First, slice off the leaves from the stem, leaving roughly two inches of the base intact. Place the stem base in a bowl or jar, stem side down using toothpicks or little rocks to stabilize the plant inside the container. Now, just fill the container with filtered water to about halfway up the stem of the plant and place in on a sunny windowsill. Change the water in your container every other day. Within a couple days you should see little shoots. Tender, fresh leaves will be ready to harvest within about 12 days!
P.S. Celery leaves are bursting with celery flavor and can be prepped like any herb!
